The stems were completely removed, and maceration lasted for 48 hours. Fermentation took place in temperature-controlled stainless steel tanks at 22\u201328\u00b0C. After fermentation, the skins remained in contact with the wine for an additional 5\u201310 days. Malolactic fermentation occurred in stainless steel tanks with oak staves.
