Description
The Touriga Nacional, Syrah, and Aragonez grapes were harvested at night to ensure they remained cool for maceration. The stems were completely removed, and maceration lasted for 48 hours. Fermentation took place in temperature-controlled stainless steel tanks at 22–28°C. After fermentation, the skins remained in contact with the wine for an additional 5–10 days. Malolactic fermentation occurred in stainless steel tanks with oak staves. The wine was then aged in 400-liter French and American oak barrels.

We have introduced sheep to the vineyards to reduce the use of weeds, pesticides, and chemical fertilizers through winter grazing. 50% of fertilization comes from animal compost and the winery's organic waste.
