Biodynamic sparkling wine from a long-established family business

Parés Baltà Pink p

Vegan and organically produced Parés Baltà Pink p is a cava modernized with Garnatxa, made using the traditional bottle fermentation method typical of it. The wine has been allowed to develop on the lees in the bottle for 18 months. Traditional cava gets new nuances in this sparkling wine, as its aroma reveals summer strawberries and raspberries. The long cellaring adds a pleasant toastiness to the aroma. The result is an enjoyable glass, whose taste is dry, raspberry-like, lightly berry-ish, toasty and subtly spicy.

Suitable pairings with this delightful social wine include, for example, tapas or dishes with fish or shrimp. It also works alongside mild goat cheese and even dark chocolate.

The Parés Baltà winery was founded as early as 1790 and is still a family business. Soligo Prosecco Rosé

Rosé proseccos are still relatively new, as European wine legislation is notoriously strict. Soligo Prosecco Rosé is made from the Glera grape typical of prosecco, but a change that came into force at the end of 2020 now also allows the use of Pinot Noir, which is used at ten percent, producing an elegant and stylish pale pink color.

Easy-to-approach and balanced in taste, Soligo Prosecco Rosé is dry, refreshingly acidic, forest berry-like and currant-like. The aroma offers forest berries, tropical fruits, roses, violets and herbs. Cold cuts and mild cheeses pair well with this wine, which can also be served with various ethnic dishes.

Soligo Prosecco Rosé is made using the tank fermentation method, and during fermentation the wine’s temperature is kept low and fermentation slow, in order to preserve the wine’s maximum fruitiness. The wine’s classification is DOC Prosecco Rose Treviso.

Vittorio Moretti built his home and winery on top of a hill called Bellavista in Italy in 1977 and began producing top-quality Franciacorta using the traditional method, which soon became famous. Since then, he has founded a second Franciacorta house and expanded his vineyards to Tuscany as well.

The estate’s 100 hectares of vineyards are located in Franciacorta’s six main areas, to provide a diverse palette for top-quality wine. The project aims for perfection. Already the bottle shape of Contadi Castaldi Brùt Franciacorta speaks of a passion reminiscent of alchemy.

In this magnificent Franciacorta, Chardonnay dominates with an 80% share, Pinot Noir & Blanc accompany. The vines are old and production takes place using traditional bottle fermentation over three years.

Contadi Castaldi Brùt Franciacorta is dry, abundantly fruity, structured and long. Peachiness is enlivened by fine acidity, the richness of taste is ennobled by elegant nuance and the long finish is embroidered with upright minerality.

This is a noble aperitif and a quality-class pleasure wine in distinguished company. Suitable to be served also as a succulent sushi wine, with other seafood delicacies or of course with quality antipasti in Italian style.
