Description

Syrah is at its best in Sicily’s unique soil and intense sunlight. The variety is cultivated in the Sambuca di Sicilia of Agrigento and also in the Acate of Ragusa. In Sambuca di Sicilia, the wine is ripe and structured, Acate is delicate and fruity. Syrah usually matures perfectly only at the end of September. The bunches are removed and fermentation with skins takes 10 days in chilled tanks. Malolactic fermentation is carried out with a selected strain of bacteria and maturation takes 10 months in French oak casks.
